BANANA CHOCOLATE CHIP MUFFINS

2 c. all-purpose
flour
½ c. packed
brown sugar
1 tbsp. baking
powder
1 tsp. baking
soda
½ tsp. salt
¾ c. chocolate
chips
2 c. mashed very
ripe bananas (about 4 large)
½ c. margarine
(melted)
¼ c. milk
2 eggs
1 tsp. vanilla
extract
Preheat oven to
375 F. Grease 12 large muffin cups. In large bowl, combine flour, sugar, baking
powder, baking soda and salt. Stir in
chocolate chips. In small bowl, blend
bananas, melted margarine, milk, eggs and vanilla. Add to flour mixture, stirring only until
just blended – do not overmix. Fill
muffin cups. Bake for 18 to 22 minutes
or until golden brown. Let stand several
minutes before eating. Makes 12 large
muffins. Per serving: 287 calories.
